My Famous Tex-Mex Bacon Avocado Dirty Chicken


Bacon, Avocado, Cheese- 
Some Spice and a little dirty?
Sounds like a party in your mouth.


Almost everyone has a signature dish- I don't know that I do.  I love it all and don't ever discriminate.  I love to cook, especially experimenting and making something up based upon an idea. This has become one of my top favorites. It is a Cajun rubbed Chicken topped with bacon, avocado, dirty corn and munster cheese.  I personally love it and think its delicious and the feeling is quite mutual.  I hope you love it as much as my housemates and I.   



Serves 5-7
What you will need:
3 Chicken Breasts (Cleaned and cut into 6-7 cutlets)
2 Avocados
6-7 Slices of Bacon (Cooked and placed aside)
1 cup and a 1/4 of Frozen Sweet Corn (Cooked in the microwave and placed aside)
5 Cherry or Grape tomatoes 
1/4 a Red Onion
1/4 LB Sliced Munster Cheese
Canola Oil

For the Cajun Rub:
1 Tbsn Sweet Paprika
1 tspn Onion Power
1 tspn Garlic Powder
1/2 tspn of Cayenne Pepper
1/2 tspn of Chili Powder
3/4 tspn of White Pepper
3/4 tspn of Black Pepper
2 1/2 tspn of Salt
1/2 tspn of dried Thyme
1/2 tspn dried Oregano
1/4 tspn dried Parsley


  
For the Sides:
1 Bag and a Half of Fresh Baby Spinach
1 tbspn Minced Garlic  

Yellow Rice
Strained and Rinsed Black Beans
Sliced Fresh Mushrooms (Optional)
1/4 Red Onion
Adobo


The Procedure:

First, quickly dip the the cutlets in flour. Then place the Cutlets in the dry rub and dip them evenly to ensure the spice is completely covered.
Start the water fo the rice and begin boiling.
Then heat up a skillet or frying pan with canola oil and cook on both sides until cooked, then quickly remove them and place on a cookie sheet.  You will be baking them after so you don't want to over cook them.  They should only take about 8  minutes in the pan, time will vary dependent on the size of the chicken.
Either dump out some of the excess oil or add a touch in dependent on how much is left after the chicken.  You just need a little oil and the seasoning dripping left in the pan. I personally like to use the same pan to cook the bacon, then the chicken and then use the same pan to sauté the dirty corn.  Place 1/4 of the onion in the pan and begin sautéing, once they begin to brown add the corn and a dash of adobo.  Then I add a little dash of most of the ingredients from the rub, except the salt because the adobo is so salty already.  Add a healthy shake of paprika, onion powder, garlic powder, and parsley.  Then a quick dash of chili powder and cayenne powder. At the end I finely dice the tomato and toss it in.  I wait till the end so the tomato doesn't over cook and make the mixture watery.

Next, I layer the bacon first on top of the chicken, then the dirty corn, then the avocado, and finally the cheese. Carefully, I repeat- very Carefully pile on the goodness to ensure it doesn't all topple off. I like to sprinkle a a little extra    
paprika and parsley on top of the cheese for the look. 

Then place into the oven at 350 degrees for about ten minutes.  

While the chicken finishes up, it is time to finish the side.

Simply sauté the spinach with a dash of olive oil and the minced garlic.  I like to add a little salt and pepper to the spinach as well. 

Put the spinach on a medium low heat and stir frequently to assure it doesn't burn.



Then go back the pan of awesome flavors and sauté the other 1/4 of onion and the mushrooms, add a touch of adobo, paprika, chili powder, garlic and onion powder. 
Then add the black beans and mix gently to evenly distribute the seasoning.   
After they are finished cooking place on top of the rice.
Turn of the spinach when done and take out the Chicken.
